Apple and blackberry crumble
Possibly the most humble of British dessert`s and certainly my favorite, a dessert which takes me back to my childhood.
My Grandmother had a Bramley apple tree in the garden when I was growing up and we would frequently pick blackberries from the hedgerow, she taught me how to prepare apple crumble.
This recipe is simple but so delicious, a recipe which has been in my family for generations, I hope you will love it as much as I do!
Crumble
25g butter (room temperature)
25g oats
50g flour
17g soft brown sugar
(1) In a bowl, using your hands rub together all ingredients to form a coarse crumble, reserve for later use
Apple filling
1 green apple
25g blackberry
15g butter
10g soft brown sugar
Pinch of salt
(1) Peel apple, remove core and cut into 8 pieces
(2) Place non-stick frying pan over heat and allow to get very hot
(3) Add apples to dry hot pan and move around continuously so that they do not burn
(4) When the apples start to color evenly, add the butter and cook until golden in color
(5) Add sugar and cook until evenly caramelized
(6) Remove from heat, add blackberries and pinch of salt, incorporate evenly
(7) Place apple filling into mold and evenly cover with the crumble mix
(8) Place into a preheated oven at 180oC until crumble is golden brown
(9) Allow to sit for two minutes and serve
